Chef Cook Blair Walsh after dinner (lunch) during a down moment had the time to show me his giant freezers and even bigger “grocery store,” a huge space of rows and rows of dry goods, enough he said with a laugh for “the zombie apocalypse.” One fridge was just for root vegetables and potatoes.
